We wanted to create a trendy unicorn cake for vegan cake lovers, and yes, we can indeed make the popular Unicorn Cascade cake as a vegan version, but we thought to create something extra special for our vegan customers. Inspired by the Fat Unicorn cake trend Reshmi created a vegan version with three light egg-less and dairy-free vanilla sponge layers sandwiched and frosted in a pastel rainbow vegan buttercream and decorated with delicious delicate piped frosting swirls, silver sugar pearls and a hand-modelled fondant fat unicorn slumped on top having bitten off a chunk from the cake. Cheeky chubby unicorn! (Don't worry, that bite is legit by the unicorn, not anyone else ;))
