Lemon meringue pie was one of the desserts I loved growing up, mostly for that brilliant contrast between sharp lemon curd, soft creaminess and crisp, chewy meringue. This cake takes those same elements and builds them into something more generous, with zesty lemon sponge, Swiss meringue buttercream marbled with lemon curd, chewy meringue pieces, shortbread crumb, cupcakes and buttercream swirls. It is bright, tart, creamy and textured, with enough lemon sharpness to keep every slice feeling fresh rather than sweet for sweetness’ sake.

Lemon Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), vegetable oil (sunflower, rapeseed), sugar, baking powder, vanilla extract, Lemon extract, colouring Yellow (glycerol E422, propylene glycol E551, colours E104 & E110).

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt.

Lemon Curd: Sugar, Pasteurised Egg (22%), Concentrated Lemon Juice (Sulphites) (8%), Butter (Milk) (8%), Water, Gelling Agent (Agar), Salt, Lemon Oil.

Meringue: Sugar, Pasteurised Egg White.

Shortbread: Wheat Flour [Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin], Butter (Milk) (33%), Sugar, Cornflour, Salt.

*Although not necessarily present in this particular product, the colours used across our range of products may include the colours E102*, E104, E110, E122 & E129 - which may have an adverse effect on activity and attention in some children.
