Watermelon Cake

A watermelon-inspired cake composed of chocolate chip red velvet sponge, green vanilla sponge and vanilla Swiss meringue buttercream. The sponges are soft, bright and playful, layered to echo the colours of fresh watermelon, with chocolate chips scattered through the red velvet sponge like little pips. Finished in red, green and white buttercream, it brings the look of a summer fruit into a polished celebration cake with soft sponge, clean vanilla and gentle cocoa richness.

This cake began from a very different place to most of our designs: not from a flavour craving or a colour palette, but from a feeling of sadness at how much comfort many of us live with while others are denied even the basics. The watermelon design carries that thought quietly, with a small portion of proceeds donated to Save the Children’s Gaza Appeal, but it is still very much a celebration cake: red velvet chocolate chip sponge, green vanilla sponge and silky Swiss meringue buttercream in red, green and white, designed to reveal its watermelon layers when cut. It has become one of our most unexpectedly viral cakes, but what matters most to me is that it holds both joy and hope in the same slice.

Green Sponge: Flour (wheatgluten), sugar, eggmilk, buttermilk (milk), yoghurt (milk), sunflower oil, baking powder, vanilla extract, salt, cocoa, colouring Green (Glycerol, Propylene, Glycol, E551, Food Colour: E104, E133).

Buttercream: Sugar, Egg White, Butter (milk), Vanilla Extract, colouring Red (glycerol E422, propylene glycol E1520, silicon dioxide E551, water, colours E124 & E12), colouring Green (Glycerol, Propylene, Glycol, E551, Food Colour: E104, E133).

Decorations

Dark chocolate chips: (Min cocoa 54.5%) Sugar, cocoa butter, cocoa mass, emulsifier; soya lecithin, natural vanilla.
