Mile High Chocolate Pistachio Cake

A mile-high chocolate pistachio cake of Belgian chocolate sponge, chocolate Swiss meringue buttercream and pistachio crème. Six soft, cocoa-rich layers give the cake its height and depth, while pistachio brings creamy nut warmth through the filling. Finished with crushed pistachios, chocolate pistachio cake pop truffles and precise buttercream piping, it is tall, rich and deliberately dramatic.

Pistachios are my weakness, and there really is no convincing substitute for their flavour. This cake was designed to feel properly extravagant: tall, generous and a little outrageous, but still balanced enough that the pistachio does not disappear behind the chocolate. It is costly to make, which is exactly why it should taste like it.

Vanilla Sponge: Wheat flour (gluten), eggs, milk, sunflower/vegetable oil, buttermilk (milk), sugar, baking powder, vanilla extract

Chocolate Sponge: Self-raising flour (wheat/gluten), bicarbonate of soda, sugar, eggs, milk, sunflower oil, cocoa powder, coffee, golden syrup

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, cocoa

Decorations: Pistachios (nuts)

*Although not necessarily present in this particular product, the colours used across our range of products may include E102*, E104, E110, E122 & E129 – which may have an adverse effect on activity and attention in some children. All products are produced on premises handling eggs, gluten, nuts, peanuts, milk, sesame, and soya hence may contain traces. Cakes may contain cocktail sticks and dowelling for support.

Each cake is hand-made individually and carefully, and while it will look similar to the images, it may not be identical.
