CAKE CAKE CAKE! That incredible Wedding-Cake moment where you cut into big fat lofty layers together as a newly wedded couple is going to be one of the most photographed, and iconic moments of anyone's wedding day. So rightfully it's an important decision, almost as important as the dress but one where BOTH parties generally make a decision over together. You may already have your favourites of course, but like most things there are cake trends that surface, and re-surface.
Top Wedding Cake Trends of 2017
Croquembouches are traditionally made with profiteroles or choux buns piled high in a conical structure and are the classic wedding "cake" of choice in France. They can be striking and are a different choice for weddings in the UK and we have seen the classic versions as well as variations using eclairs, macarons and meringues.
Our version goes beyond that! For a truly unique style of a wedding cake, we did away with the traditional and created a Croquembouche cake incorporating sponge layers in the base as well as the actual tower cone (instead of commonly used styrofoam or cardboard), frosted with our signature Swiss meringue buttercream, glazed in Belgian chocolate, and decorated with choux puffs, eclairs, macarons, baked buttermilk doughnuts, candied popcorn, and Ferrero Rocher and "soft-serve" mini ice cream cones. This particular design is called the "Horn of the Unicorn" and is ridiculously delightful.
Ombre wedding cakes stormed into the scene sometime in 2014 and have grown increasingly popular. The Watercolour effect could be a natural progression from the Ombre striped effect, where colours are blended into each other, being both "current" and also a nod to impressionism a la Monet.
Pantone, the authority on colour communication, have named Rose Quartz and Serenity as their Colours of the Year last year. Both of these colours lend themselves perfectly to wedding palettes - something blue and something pink.
Personally, naked cakes are a bizarre phenomenon to me. Cake is good on it's own, but it's GREAT with icing. And who wouldn't want GREAT cake for their wedding? I have seen very few naked cakes that look good, and here's a great blog post on how the majority of bakers view the Naked Cake (that's with umm...puzzled disdain at best). But I get the whole rustic appeal - it suits barn/back garden weddings. So a way to work the rustic aspect into a cake with no compromise would be the Semi-Naked Cake. Perfectly frosted but stripped back enough to let the layers peek through from underneath.
This isn't a new trend as there are generations of Alice in Wonderland fans who would like to incorporate it for their wedding day. And with so much inspiration to be had from the Mad Hatter's Tea Party, Roses, Queen of Hearts etc Alice in Wonderland is very much one of the reigning wedding themes and timeless.
Salted Caramel Wedding Cakes
ANYTHING SALTED CARAMEL! According to Selfridges, salted caramel is one of the most wanted flavours of EVERYTHING in their food hall. That's saying something. So naturally, it would play into wedding cakes. It's the perfect balance between sweet and a pinch of savoury.
These are the top 6 wedding cake trends I have observed, and while the Telegraph have previously featured us in their top wedding trends of 2016 it's always great to keep looking forward and staying ahead. However, whatever the trends are, weddings are ultimately the most personal celebrations, and choosing the most important cake of someone's life can be pretty daunting. If you are dead-set for royal iced fruitcake, then go for it! However, your guests might prefer one of the above ;)
