A matcha croquembouche cake of chocolate and matcha green tea sponge, vanilla, raspberry and matcha Swiss meringue buttercream, finished with chocolate glaze. Built entirely from cake rather than a hidden display tower, it balances cocoa depth with the clean, earthy bitterness of matcha and the lift of raspberry. Choux buns, eclairs, baked buttermilk doughnuts, macarons, buttercream flowers, matcha cones, chocolate pearls and candied popcorn bring cream, crunch, colour and patisserie theatre.

This version came from wanting to take the grandeur of a croquembouche and make it feel more playful, modern and very much Anges. Matcha gives sweetness a little discipline, which I love, and the pink and green palette lets the whole piece feel elegant without behaving itself too much.
