Sunshine Lemon Cake

Both husband and I love lemon cake and were eagerly anticipating the Grand Tour's first episode. Lemon cake and Grand Tour? Why am I even putting those two in the same sentence?? Just bear with me...

Lemon Cake

Whatever your stance on Jeremy Clarkson's personality or behaviour that led to the mass exodus from Top Gear, I don't think you could completely deny that Top Gear is not Top Gear without the three amigos. But I did suspect the format may have also been hackneyed as the Evans/Le Blanc Top Gear reboot was flat and flacid. So how important could the three chaps be to the formula anyway?!

Turns out, A LOT. Grand Tour was like watching a polished, Hollywood-ised, high-octane action comedy. It was great to see the three friends together having fun in a completely new, yet familiar and comfortable setting. I guess I should disclose that I am in no way fascinated by motoring and cars etc, nor am I particularly a big fan of any/all of the men but I LOVE their enthusiasm, sense of adventure and humour. And doing something they obviously enjoy with so much gusto makes the show enjoyable. That opening scene, with that incredible version of "I can see clearly now" was so freakin' Thelma & Louise-esque I have adopted it as my week's Mantra, because I was in desperate need of a mantra to get me through the next few weeks.

Just like Clarkson & Co, what I need is a reboot. I haven't punched anyone over cold meats or anything like that but I was highly strung, burnt-out and having taken on so many various projects at once I feel I haven't paid enough attention to what I love doing which is creating, trialling and testing. Lemon cake is one of my favourites, yet it is so under-represented in our range. That's got to be one of the first things I have to address as I can see a lot clearer now (the rain has gone la la la laaa). 

Enter our Sunshine Lemon Cake - three layers of zesty lemony sponge cake with lemon and cream cheese Swiss meringue buttercream frosting, lemon and raspberry tarts, macarons and disgestives. For me, this is a flavour and texture dream - fresh and tart balanced with sweet, and the fluffy sponge with the biscuity crunch. I was singing the tune while making this, and singing again while eating this, and singing it now while writing this.
