To me, as a chef, red velvet does not make much sense. It's like a halfway house between vanilla and chocolate. And last time I checked, red isn't a flavour you can (or should) taste. It's having an identity crisis. It asks itself each night, "Who am I? What is my purpose?" I know there are legions of die-hard red velvet fans, but I needed more convincing. And I started with the Party Red Velvet Cake.

Bold, vibrant, with a little bit of *je-ne-sais-quoi*. The die-hards will appreciate the slight twist on the classic, and the red-velvet sceptics will be converted by this cake.

What makes this red velvet special is the actual cake sponge—light and moist, but with just the right amount of depth and richness from the Valrhona cocoa and Madagascan vanilla, and a definite twang from the buttermilk-rich batter. The whipped Swiss meringue buttercream frosting adds much-needed lightness, and the Belgian chocolate ganache adds a delicious mouthfeel. It’s a modern classic.
