A meta rainbow cake of Madagascan vanilla sponge and vanilla Swiss meringue buttercream, built with five freshly baked rainbow layers. The sponge is light, soft and clean in flavour, giving the colour its proper stage without losing the calmness of good vanilla cake. Finished with a miniature rainbow cake, tiny cake slice, cupcake, mini cupcake and rainbow buttercream swirls, it is cake architecture with a playful streak.

This is the cake we make when one cake feels far too sensible. I wanted it to have the joy of a childhood party and the absurdity of a cake within a cake, but still feel polished rather than chaotic. It is pure excess, very deliberate, and almost impossible not to smile at.
