Pistachio has always felt deeply personal to me, tied to the Asian and Middle Eastern desserts I grew up with, and this cake, the first pistachio cake I ever created, still has that lovely balance I wanted from the beginning: soft vanilla pistachio sponge, silky buttercream, crushed pistachios, macarons and just enough pink-and-green glamour to make it feel properly special.
Pistachio Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, pistachios (nuts).
Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, colouring Green (Glycerol, Propylene Glycol, E551, Food Colour: E104, E133), colouring Pink (Glycerol, Propylene Glycol, E551, Food Colour: E104, E155, E129).
Decorations:

Your cake is baked fresh for your chosen date and keeps beautifully for up to five days from delivery. Store it carefully, serve it at room temperature, and the sponge and buttercream will be at their best.
