It's no secret I am obsessed with pistachios. My Asian-Middle-Eastern heritage probably has a lot to do with it, and I grew up on pistachio-based desserts. This cake was the first pistachio cake I ever created and remains one of our best-sellers in London and Surrey.

Pistachio Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, pistachios (nuts).

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, colouring Green (Glycerol, Propylene Glycol, E551, Food Colour: E104, E133), colouring Pink (Glycerol, Propylene Glycol, E551, Food Colour: E104, E155, E129).

Decorations:

Macarons: Icing sugar, almonds (nuts), sugar, butter (milk), egg white, raspberry, tonka bean extract, strawberry compound (flavouring substances, glucose syrup, invert sugar syrup, strawberries, vegetable extracts [carrots, red beet], modified starch, ethyl alcohol, citric acid, maltodextrin), pistachio compound (flavouring substances, glucose syrup, invert sugar syrup, pistachios [nuts]), colour E102, E133.

Crushed pistachios (nuts).

Storage: Keep the cake in its box in a cool room, or refrigerate if not serving the same day. For detailed guidance, see our cake storage and shelf life guide.

Serving: Bring the cake to room temperature before serving. Allow around three hours out of the fridge so the sponge softens and the buttercream becomes silky and aromatic.
