Oil replaces butter in the batter, so there is no waiting for butter to soften and no creaming stage. Granulated sugar keeps the method simple, while buttermilk or yoghurt gives the crumb flavour and a gentle tang.
Why we use it
The method is deliberately straightforward: one bowl, ingredients weighed in grams and no stand mixer required. A hand whisk or wooden spoon will do.
