Salted Caramel Latte Cake

A caramel chocolate cake composed of toffee-flavoured chocolate and vanilla bean sponges, chocolate Swiss meringue buttercream, sea-salted caramel buttercream and caramel ganache. The sponges are soft, rich and fragrant, with toffee warmth running through the chocolate and vanilla layers. Finished with chocolate and sea-salted caramel buttercreams, a glossy chocolate and caramel ganache glaze, Caramel Latte chocolate cups and chocolate-covered biscuits, it brings together cocoa depth, buttery caramel, vanilla softness and crisp chocolate texture in a polished celebration cake.

This cake came from my love of salted caramel and those slightly over-the-top caramel lattes that somehow feel both comforting and completely unnecessary, in the best way. I wanted that same warmth in cake form, with toffee-flavoured chocolate and vanilla bean sponges, chocolate Swiss meringue buttercream, sea-salted caramel buttercream, caramel ganache, Caramel Latte chocolate cups and chocolate-covered biscuits. It is sweet, salty, creamy and chocolatey, with enough salt to keep the caramel lively and enough sponge to stop the whole thing becoming too much.

Chocolate Sponge: Flour (wheat, gluten), sugar, egg, milk, cocoa, sunflower oil, sodium bicarbonate (raising agent: E500), instant coffee granules, vanilla extract.

Vanilla Sponge: Wheat flour (gluten), eggsmilk, buttermilk (milk), sugar, baking powder, vanilla extract.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, cocoa, salt, cocoa, salted caramel ganache [white chocolate [(min cocoa 28%, min milk solids 23%), sugar, cocoa butter, whole milk powder, cocoa mass, emulsifier (Soya Lecithin), natural vanilla)], cream (milk), sugar, salt].

Decorations - 

Chocolate drip: dark chocolate [(Min cocoa 54.5%) Sugar, cocoa butter, cocoa mass, emulsifier; soya lecithin, natural vanilla], butter (milk).

Oreo cookies: Vegetable Fats (Palm, Palm Kernel), Flavour (Vanillin), wheat Starch, Glucose-Fructose Syrup, Fat Cocoa Powder 4.7%, Leavening Agents (Potassium Carbonates, Ammonium Carbonates, Sodium Carbonates), wheat flour, Salt, Emulsifiers (soya lecithin, Sunflower Lecithin), Sugar.

Chocolate biscuit sticks: Wheat Flour , Sugar, Cocoa Butter, Cocoa Mass, Skimmed Milk Powder, Vegetable Fats (Palm, Coconut), Glucose Syrup, Milk Fat, Whey Powder (from Milk), Salt, Emulsifier (Soya Lecithin), Raising Agent (E503), Yeast, Flavouring.
