Rose and pistachio feel very close to home for me, tied to the Indian and Middle Eastern sweets I grew up with, while raspberry brings in the sharper British fruit note I have come to love here. This cake is built around that meeting point: fragrant rose pistachio sponge, silky pink vanilla Swiss meringue buttercream, pistachio cream, crushed pistachios, rose petals and freeze-dried raspberries, so each slice moves between floral softness, nutty depth and bright fruit acidity.

Rose Pistachio Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, pistachios (nuts), natural rose flavouring (non-alcoholic).

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, colouring Pink (Glycerol, Propylene Glycol, E551, Food Colour: E104, E155, E129).

Pistachio Cream: Pistachio (nuts), sugar, milk powder, extra virgin olive oil, vegetable fat, emulsifier: soy lecithin.
