The sponge is light, soft and clean in flavour, layered with silky vanilla buttercream for a smooth finish. Decorated with colourful doughnuts, crisp chocolate shards and a generous scattering of sprinkles, it brings colour, movement and playful drama to a polished vanilla celebration cake.

This cake was inspired by the sheer spectacle of Lady Gaga: colour, confidence, camp and a complete refusal to whisper. I wanted that same sense of joyful excess in cake form, with airy vanilla sponge, silky rainbow-striped Swiss meringue buttercream, baked buttermilk doughnuts, chocolate shards and sprinkles. It is bright, theatrical and unapologetically fun, but still built on proper sponge, good buttercream and a clean vanilla finish.
