Carrot & Walnut Cake

A carrot walnut cake composed of soft carrot sponge, toasted walnuts, gentle warming spice and vanilla Swiss meringue buttercream. The sponge is light, moist and fragrant, with crushed walnuts folded through for texture and a rounded nutty depth. Wrapped in smooth vanilla buttercream and finished with whole and crushed walnuts, it brings the warmth of a classic carrot cake into a cleaner, more polished celebration finish.

Carrot cake has a lovely way of crossing generations: this one is adored by my mother-in-law and my son, which feels like a rather excellent test panel, and it sits in a long tradition of carrot sweets, from Gajar ka Halwa to Gajrela and Cezerye. Our version keeps that familiar warmth, with soft carrot sponge, gentle spice and walnuts for crunch, then gives it an Anges de Sucre finish with silky vanilla Swiss meringue buttercream, so it feels comforting, fragrant and generous without ever becoming heavy.

Carrot Sponge: self-raising flour (wheat), eggs, yoghurt (milk), brown sugar, cinnamon, nutmeg, orange zest, carrots.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt.
