A berry peanut butter cake composed of chocolate sponge, vanilla sponge, peanut butter Swiss meringue buttercream, berry macarons and chocolate glaze. This cake came from a craving for that lovely peanut butter and berry combination, somewhere between a PB&J sandwich and a proper celebration cake. I wanted the peanut butter to feel creamy and rounded rather than heavy, with the berry notes bringing just enough sharpness to lift it. Built with chocolate sponge, vanilla sponge, peanut butter Swiss meringue buttercream, berry macarons, peanut butter cups, crushed peanuts and a glossy chocolate drip, it has that sweet-savoury comfort I love, but with a cleaner, more polished finish.

Vanilla Sponge: Flour (wheat/gluten), sugar, baking powder, bicarbonate of soda, salt, eggs, sunflower oil, vanilla extract, buttermilk (milk).

Chocolate Sponge: Self raising flour (wheat/gluten), bicarbonate of soda, sugar, eggs, milk, sunflower oil, cocoa powder, coffee.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, white chocolate (milk/soya), cream (milk), peanut butter.

Peanut Butter: Roasted Peanuts (93%), Peanut Oil, Certified Sustainable Palm Oil, Sugar, Salt.

Chocolate Drip: Dark chocolate (milk/soya), butter (milk).

Decorations -
