My first taste of a Victoria Sponge cake happened quite late in life - when I moved to the UK for university. It was at my friend's house where her granny had brought round a cake. At first, I didn't think much of it judging by just its looks. Two layers of sponge, cream and jam in the middle, sprinkled with some icing sugar. But then I had a slice and I instantly felt AWFUL for judging the book by its cover. OH MY GOSH it was delightful. But now, having a luxury cake shop means all our cakes are judged by their appearance and so I dressed our Victoria Sponge cake up.
