Back in 2015, when we had a little coffee shop in a posh part of London (Kensington, for those who are curious), we sold just two things—exquisite coffee and hand-made macarons. We slowly increased our range of delightful little treats to include gourmet marshmallows, cookies, and doughnuts, but every day we'd have numerous customers asking for cake. So I gave in—let them eat CAKE! But not just any cake. It had to be Anges-style. We grabbed all the different types of macarons from the counter and piled them up high on the cake with Callebaut Belgian chocolate drip. And as the cakes took off, our business went from being macarons-with-a-side-of-cake to cake-with-a-side-of-macarons.
