Everything deliciously pistachio-ey on a cake. That was the simple inspiration behind this far-from-simple cake.

I haven't been to Japan yet. My husband has visited (without me!) and sent me stunning photos of everything I was missing out on—the sushi, the vending machines, the pastries and desserts, and the cherry blossoms. I tried to live vicariously through him, and with inspiration from one of my favourite pastry chefs, Sadaharu Aoki in Paris, I created the Matcha Sakura Cake.

This cake brings a feeling of refined elegance, calm, and reflection, much like sitting under a cherry blossom tree with a warm cup of matcha green tea. It’s peaceful, delicate, and full of subtle beauty.

What makes this cake special is the blend of earthy matcha with rich Valrhona Belgian chocolate sponges and the tart sweetness of raspberry macarons. It’s not just a cake—it’s an experience that transports you to a serene Japanese garden with every bite, even if you can't physically get there anytime soon, like me.

Chocolate Sponge: Self raising flour (wheat/gluten), bicarbonate of soda, sugar, eggsmilk, sunflower oil, cocoa powder, coffee, golden syrup. 

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, matcha green tea.

Chocolate drip: dark chocolate [(Min cocoa 54.5%) Sugar, cocoa butter, cocoa mass, emulsifier; soya lecithin, natural vanilla], butter (milk.

Macarons: Icing sugar, almonds (nuts), sugar, butter (milk), egg white, raspberry, tonka bean extract, Strawberry compound (flavouring substances, glucose syrup, invert sugar syrup, strawberries, vegetable extracts (carrots, red beet), modified starch, ethyl alcohol, citric acid, maltodextrin)

Candied popcorn: Popped maize, Rapeseed Oil , Salt , Emulsifier (Sunflower Lecithin), cream (milk), invert sugar syrup, sugar, colouring Pink (Glycerol, Propylene, Glycol, E551, Food Colour: E104, E155, E129)

Strawberry crisp pearls: Sugar, Cocoa fat, Whole milk powder, Whey powder (milk), Emulsifier; Soya lecithin, Natural and artificial flavour, Cochineal extract colour, Natural vanilla flavour, Crisped cereals (wheat flour, sugar, wheat malt flour, starch (wheat), sodium bicarbonate, salt, cocoa fat, natural flavour), glucose syrup, sugar, confectioners glaze (gum arabic), vegetable fat (palm, kernel, coconut), modified corn starch added as glazing agents).

Your cake is baked fresh for your chosen date and keeps beautifully for up to five days from delivery. Store it carefully, serve it at room temperature, and the sponge and buttercream will be at their best.
