Tiramisu Coffee Cake

A coffee celebration cake composed of rich coffee sponge, vanilla Swiss meringue buttercream, Belgian chocolate glaze, chocolate macarons, coffee curls and alcohol-free Savoiardi sponge fingers. The sponge is soft, aromatic and coffee-led, layered with smooth vanilla buttercream in a semi-naked finish for a clean, creamy contrast. Finished with glossy chocolate, crisp macarons, coffee curls and chocolate-glazed Savoiardi, it brings together espresso warmth, vanilla softness, chocolate depth and delicate biscuit texture in a polished celebration cake.

I find it very hard to refuse tiramisu at the end of an Italian meal. That mix of coffee bitterness, soft cream and gentle sweetness is exactly the sort of dessert I love, so this cake takes the spirit of tiramisu and builds it into something more celebratory. The coffee sponge is dark, aromatic and not overly sweet, layered with smooth vanilla Swiss meringue buttercream, then finished with Callebaut Belgian chocolate glaze, chocolate macarons, coffee curls and alcohol-free Savoiardi sponge fingers. It has the comfort of a proper coffee dessert, with enough chocolate and cream to make it feel indulgent, but still balanced enough for the coffee to lead.

Coffee Sponge: Wheat flour (gluten), eggsmilk, buttermilk (milk), sugar, coffee granules (Soluble Coffee, Roast and Ground Coffee), baking powder, vanilla extract

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt.

Decorations -

Chocolate drip: dark chocolate [(Min cocoa 54.5%) Sugar, cocoa butter, cocoa mass, emulsifier; soya lecithin, natural vanilla], butter (milk).

Wafer Curls: Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Thiamin, Niacin), Sugar, Rapeseed Oil, Dried Whole Milk, Salt, Emulsifier: Soya Lecithin, Colour: Plain Caramel, Chocolate Flavour Lining: Sugar, Palm Kernel Oil, Fat Reduced Cocoa Powder, Whey Powder (from Milk), Dried Skimmed Milk, Emulsifier: Soya Lecithin, Flavouring.
