Mocha Frappe Cupcake Cake

An espresso powered cake. Three layers of soft coffee sponge cake. Decorated with frappe-style cupcakes, coffee-latte ganache chocolate cups, chocolate crispearls, buttercream swirls, and coffee curls, glazed with coffee ganache drip. Frosted with vanilla and chocolate Swiss meringue buttercream.

This cake came from my very enthusiastic mocha frappe phase, which may or may not have lasted longer than I care to admit. I wanted to capture that first hit of coffee, chocolate and cream in cake form, with soft coffee sponge, vanilla and chocolate Swiss meringue buttercream, coffee ganache, crisp chocolate pearls, coffee curls and little frappe-style cupcakes on top. It smells wonderful as soon as the box opens: rich, creamy, chocolatey and properly coffee-led, with enough playfulness to keep it from taking itself too seriously.

Coffee Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, coffee extract.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, cocoa.

Decorations:

Coffee Ganache Drip: White chocolate (milk), soya lecithin, cream (milk), coffee extract.

Chocolate Ganache Drip: Dark chocolate (Min cocoa 54.5%), sugar, cocoa butter, cocoa mass, emulsifier; soya lecithin, natural vanilla, butter (milk).

Coffee Latte Cups: Dark chocolate (milk), soya lecithin, White chocolate (milk), soya lecithin, cream (milk), coffee extract.

Coffee Curls: Sugar, WHEAT Flour, Vegetable Oils (Palm Kernel, Coconut), Fat Reduced Cocoa Powder (5%), Emulsifier (SOYA Lecithins), WHEAT Starch, Maltodextrin, EGG Albumen, Dried Semi Skimmed MILK, Colours (Plain Caramel, Annatto), Whey Powder (MILK), Salt, Flavouring.

Chocolate Crispearls: Chocolate 84.0% (cocoa mass, sugar, cocoa butter, anhydrous Milkfat, emulsifier: SOYA lecithin, natural vanilla flavouring), crisped cereals (WHEAT malt flour, starch (WHEAT), raising agent E500ii, salt, cocoa butter, natural vanilla flavouring), glucose syrup, sugar, glazing agent: E414, modified starch, vegetable fat (coconut).

*Although not necessarily present in this particular product, the colours used across our range of products may include the colours E102*, E104, E110, E122 & E129 - which may have an adverse effect on activity and attention in some children. All products are produced on premises handling eggs, gluten, nuts, peanuts, milk, sesame and soya hence may contain traces. Please note cakes may contain cocktail sticks and dowelling for support.
