Mint choc chip takes me straight back to ice cream shops, and I am firmly in the camp that believes it should be green. Not because nature insists on it, but because childhood does. This cake is a little nostalgic, a little divisive, and exactly the sort of flavour I make for people who know they love mint chocolate and need no convincing.
