A Matcha Sakura cake of Valrhona chocolate sponge, Japanese matcha Swiss meringue buttercream and glossy chocolate drip. I have not been to Japan yet, though my husband has rather rudely gone without me and sent photos of everything I was missing. This cake came from that longing, with a little inspiration from Sadaharu Aoki: calm, pink, green and quietly elegant, like my imagined version of cherry blossom season in cake form.
Chocolate Sponge: Self raising flour (wheat/gluten), bicarbonate of soda, sugar, eggs, milk, sunflower oil, cocoa powder, coffee, golden syrup.
