Eton Mess Cake

A strawberry Eton Mess cake composed of fresh strawberry sponge, Swiss meringue buttercream, strawberry sauce, meringue and freeze-dried strawberries. The sponge is soft, light and baked with real strawberries, giving each layer a gentle fruit sweetness and natural brightness. Eton Mess is one of those desserts that works because it never tries too hard: strawberries, cream, meringue and a bit of glorious disorder. I wanted to keep that lightness and crunch, but build it into something more composed, with fresh strawberry sponge, silky Swiss meringue buttercream, marbled strawberry sauce, crisp meringue pieces and freeze-dried strawberries, so you still get the joy of the original without needing a spoon and a very forgiving tablecloth.

Strawberry Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, strawberries, freeze-dried strawberries, colouring Pink (Glycerol, Propylene, Glycol, E551, Food Colour: E104, E155, E129).

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt.

Decorations

Strawberry Sauce: Invert Sugar Syrup, Concentrated Strawberry Juice, Colour: Anthocyanins, Acid: Citric Acid, Natural Flavouring.

Meringue: Sugar, Pasteurised Egg White.

Freeze-dried strawberries

*Although not necessarily present in this particular product, the colours used across our range of products may include the colours E102*, E104, E110, E122 & E129 - which may have an adverse effect on activity and attention in some children. All products are produced on premises handling eggs, gluten, nuts, peanuts, milk, sesame and soya hence may contain traces. Please note cakes may contain cocktail sticks and dowelling for support.
