Pistachio Kunafa Mile High Cake

A pistachio kunafa mile-high cake of pistachio sponge, Belgian chocolate Swiss meringue buttercream and pistachio crème kataifi. Six soft, nutty layers are filled with crisp toasted pastry and pistachio cream, giving the cake its contrast of sponge, crunch and silk. Finished with handmade chocolate pistachio truffles, crushed pistachios, toasted kunafa and precise buttercream piping, it brings the texture of Dubai chocolate into a tall, polished celebration cake.

I was deeply sceptical of viral Dubai chocolate until I tasted the combination properly. Then I understood the fuss: pistachio, chocolate and that impossible kataifi crunch are dangerously good together. This cake is my way of making the idea feel generous, celebratory and properly Anges, with height, texture and enough pistachio to make restraint feel entirely unnecessary.

Vanilla Sponge: Wheat flour (gluten), eggs, milk, sunflower/vegetable oil, buttermilk (milk), sugar, baking powder, vanilla extract.

Pistachio Sponge: Wheat flour (gluten), eggs, milk, sunflower/vegetable oil, buttermilk (milk), sugar, pistachio (nuts), baking powder, vanilla extract.

Chocolate Sponge: Self raising flour (wheat/gluten), bicarbonate of soda, sugar, eggs, milk, sunflower oil, cocoa powder, coffee, golden syrup.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, cocoa.

Pistachio cream: Pistachio (nuts), sugar, milk powder, milk whey powder, non-hydrogenated vegetable fats (sunflower seed oil, coconut oil, cocoa butter), extra virgin olive oil, emulsifier: soy lecithin, flavourings.

Kataifi pastry: Wheat flour, water, salt, butter (milk).

Decorations: Pistachios (nuts).

*All products are made in a kitchen handling eggs, gluten, nuts, peanuts, milk, sesame, and soya and may contain traces. Cakes may contain cocktail sticks and dowels for support.
