Signature Pistachio Wedding Cake

A three-tier pistachio wedding cake of crushed pistachio buttermilk sponge, Madagascan vanilla Swiss meringue buttercream and hand-finished patisserie detail. The sponge is soft, moist and nut-led, with buttermilk giving a tender crumb and gentle lift. Pistachio has always felt like a proper dessert ingredient to me, not a garnish. I wanted this cake to feel generous, elegant and flavour-led, with enough structure for a wedding table but enough softness that guests actually want to finish the slice.

Pistachio Sponge: Wheat flour (gluten), eggs, milk, buttermilk (milk), sugar, baking powder, vanilla extract, pistachios (nuts).

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, colouring Green (Glycerol, Propylene Glycol, E551, Food Colour: E104, E133), colouring Pink (Glycerol, Propylene Glycol, E551, Food Colour: E104, E155, E129).

Macarons: Icing sugar, almonds (nuts), sugar, butter (milk), egg white, raspberry, tonka bean extract, strawberry compound, pistachio compound, colour E102, E133.

Decoration: Crushed pistachios (nuts).
