A matcha chocolate cake composed of freshly baked chocolate sponge, Japanese matcha green tea Swiss meringue buttercream, chocolate ganache, matcha doughnuts and chocolate macarons. The sponge is soft, dark and cocoa-rich, layered with smooth matcha buttercream for an earthy, gently bitter contrast against the richness of the chocolate. Finished with a glossy chocolate ganache drizzle, baked matcha buttermilk doughnuts and chocolate macarons, it brings together cocoa depth, green tea fragrance, creaminess and crisp shell in a polished celebration cake.

I have a real soft spot for matcha, even if it does divide a room. To me, the best matcha is earthy, grassy, slightly savoury and properly tea-like, which is exactly why chocolate works so beautifully with it. The chocolate sponge gives depth and comfort, while the Japanese matcha Swiss meringue buttercream brings that gentle bitterness and green tea fragrance to stop the cake feeling too sweet. Finished with chocolate ganache, matcha doughnuts and chocolate macarons, it is rich, calm, a little unexpected and very good at converting matcha sceptics.

Chocolate Sponge: Self raising flour ( wheat/gluten ), bicarbonate of soda, sugar, eggs , milk , sunflower oil, cocoa powder, coffee, golden syrup.

Buttercream: Sugar, egg white, butter ( milk ), vanilla extract, salt, matcha green tea.
