A chocolate hazelnut cube cake of Valrhona cocoa sponge, chocolate Swiss meringue buttercream and hazelnut almond praline cream. The sponge is moist, dark and refined, layered with smooth buttercream and praline for roasted nut depth. Encrusted with crushed roasted hazelnuts and piped chocolate borders, it has the clean geometry of a cube with the richness of a chocolate truffle.

I wanted this cake to feel like a chocolate truffle sharpened into something architectural. The cube gives it discipline, the roasted hazelnuts give it texture, and the praline brings that grown-up Nutella memory without the sweetness taking over. It slices beautifully too, which is deeply satisfying if, like me, you enjoy a clean edge almost as much as a good forkful.
Sponge: Flour (wheat gluten), sugar, egg, milk, cocoa, sunflower and rapeseed oil, sodium bicarbonate (raising agent: E500), instant coffee granules, vanilla extract.
Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, salted caramel [white chocolate (soya, milk), cream (milk), sugar, salt], colouring Pink (Glycerol, Propylene Glycol, E551, Food Colour: E104, E155, E129), colouring Red (Glycerol, Propylene Glycol, Water, E551, Food Colour: E129, E124).
Hazelnut and Almond Cream: Hazelnut (nuts), almond (nuts), sugar, milk powder, milk whey powder, non-hydrogenated vegetable fats (sunflower seed oil, coconut oil, cocoa butter), extra virgin olive oil, emulsifier: soya lecithin, flavourings.
