This beautiful beast of a birthday cake is exactly what unicorn and rainbow cake dreams are made of. What could possibly top a classic Unicorn Cake? Mashing it together with a rainbow cake — and then building the whole thing in our exclusive, over-the-top Cakescape style. This one went to a very sweet birthday girl in Finchley for her unicorn-and-rainbow-themed party.

There were layers upon layers of rainbow sponge, from full 6" and 8" tiers right down to teeny-tiny 1.5" cakes. For scale — a 1.5" cake is smaller than my little finger… and my fingers are already comically small.

Cakescapes need a head start, so I began the fondant figures and rainbows days before. The chubby unicorn was inspired by the one from our Fat Unicorn cake, though I did briefly flirt with adding a brown unicorn too — no real reason beyond “why not?”

I also wandered off-piste and sculpted a unicorn bum. I wasn’t sure where it would go in the Cakescape, but it felt like a must-do idea at the time — and honestly, it turned out adorable.

This Cakescape needed 25 separate sponges in five colours, all made with my beloved Hero sponge recipe. It’s soft, tender, soaks up colour beautifully, and tastes like a dream. The larger cakes were decorated in rainbow-and-sprinkle fault-line styles, while the tiny 1.5" ones were piped in rainbow stripes, old-school unicorn styling, and our original Meta Cake look (you’ll spot those in our Birthday Cake Collection).

As with all Cakescapes, the moment everything comes alive is when I start assembling it on the board — first the cakes, then the buttercream details, then the fondant figures and finishing touches.

There are so many delightful details on this cake, but the unicorn bum absolutely steals the show. I still can’t get over how cute it is.
