Every baker, professional or otherwise, has a drawer full of tools. Some are indispensable. Some seemed like a brilliant idea at the time and have not been seen since 2019.
These are the cake decorating tools I actually reach for, both at work and at home.
1. Offset palette knife
An offset palette knife is one of the most useful tools for spreading buttercream, ganache and fillings. The angled blade keeps your hand clear of the cake and gives you much more control than a table knife.
2. Cake scraper
For straight sides and a clean buttercream finish, a rigid cake scraper is invaluable. Metal versions are easy to clean and give a crisp edge.
3. Piping bags
Reusable or disposable both work. The important thing is using a bag strong enough for the filling and not overfilling it.
4. A small set of piping nozzles
You do not need dozens. A round nozzle, a star nozzle and a petal-style nozzle cover an enormous amount of decorating work, from lettering to shells and simple flowers.
5. Turntable
A turntable makes smoothing and piping around a cake far easier because the cake moves while your hand stays relatively steady.
6. Digital scales
Not glamorous, but essential. Baking is much more repeatable when ingredients are weighed rather than estimated by volume.
7. Fine paintbrushes kept for food use
Useful for small decorative details and applying edible colour. Keep them solely for cake work and clean them appropriately between uses.
8. Small sharp knife
Useful for trimming fondant, cutting parchment and tidying decorations. Keep fingers well clear and use an appropriate cutting surface.
9. Cake leveller or serrated knife
A leveller can be convenient, but a good serrated knife works perfectly well for splitting sponge layers once you are comfortable using it.
10. A good cake board
Technically not a decorating tool, but the right board makes decorating, moving and presenting a cake much easier. It should be flat, clean and suitable for the size and weight of the finished cake.
What I would buy first
If you are starting from scratch, I would buy digital scales, an offset palette knife, a scraper, a turntable and three useful piping nozzles before anything elaborate. Technique matters far more than a cupboard full of gadgets.
And if decorating is the part you would rather leave to us, our wedding cakes and novelty cakes show two very different ends of what those tools can produce.
