Matcha Latte Cake

A matcha chocolate cake composed of chocolate sponge, red velvet sponge, matcha green tea sponge, vanilla Swiss meringue buttercream, matcha buttercream and ganache. Each sponge brings a different note: cocoa depth, soft buttermilk tang and the earthy, gently bitter fragrance of matcha. Finished with vanilla and matcha buttercream, Belgian chocolate ganache, matcha ganache, matcha latte chocolate cups and chocolate-covered biscuits, it brings together chocolate richness, green tea depth, creaminess and crisp biscuit texture in a polished celebration cake.

This cake came from my love of matcha and the way it can make sweet things feel more grown-up: earthy, gently bitter, tea-like and wonderfully fragrant. I wanted to pair that calm green tea depth with soft sponge and a little Anges playfulness, so this cake brings together chocolate, red velvet and matcha sponge with vanilla and matcha Swiss meringue buttercream, Belgian chocolate ganache, matcha ganache, matcha latte chocolate cups and chocolate-covered biscuits. It is creamy, chocolatey, lightly bitter and not overly sweet, with just enough mischief in the decoration to stop it becoming too serious.

Chocolate Sponge: Self raising flour (wheat/gluten), bicarbonate of soda, sugar, eggsmilk, sunflower oil, cocoa powder, coffee. 

Red Velvet Sponge: Wheat flour (gluten), eggsmilk, buttermilk (milk), sugar, baking powder, vanilla extract, cocoa powder, colouring Red [Vegetable Glycerine E422, Mono Propylene Glycol E1520, Water, Ponceau 4R E124, Allura Red E129].

Green Tea Sponge: Wheat flour (gluten), eggsmilk, buttermilk (milk), sugar, baking powder, vanilla extract, matcha powder.

Buttercream: Sugar, egg white, butter (milk), vanilla extract, salt, matcha powder.

Decorations -

Chocolate Drip: Dark chocolate (milksoya), Butter (milk).

Matcha Drip: white chocolate (milksoya lecithin), double cream (milk), matcha powder.

Matcha Latte Cups: dark chocolate (milksoya)white chocolate (milksoya lecithin), double cream (milk), matcha powder.

Chocolate Biscuits: Wheat Flour , Sugar, Cocoa Butter, Cocoa Mass, Skimmed Milk Powder, Vegetable Fats (Palm, Coconut), Glucose Syrup, Milk Fat, Whey Powder (from Milk), Salt, Emulsifier (Soya Lecithin), Raising Agent (E503), Yeast, Flavouring.

Although not necessarily present in this particular product, the colours used across our range of products may include the colours E102*, E104, E110, E122 & E129 - which may have an adverse effect on activity and attention in some children. All products are produced on premises handling eggs, gluten, nuts, peanuts, milk, sesame and soya hence may contain traces. Please note cakes may contain cocktail sticks and dowelling for support. Each cake is hand-made individually and carefully and while will look similar to the images, may not be identical.

Your cake is baked fresh for your chosen date and keeps beautifully for up to five days from delivery. Store it carefully, serve it at room temperature, and the sponge and buttercream will be at their best.
