A pistachio baklava cake of pistachio sponge, Sicilian crema al pistacchio, vanilla Swiss meringue buttercream and crisp baklava. Baklava is one of those desserts that knows exactly what it is: rich, sticky, nutty and completely unapologetic. I wanted this cake to carry that same generosity, but with the softness and polish of an Anges de Sucre sponge cake. It feels familiar to my roots, properly indulgent and very much made for pistachio obsessives.

Your cake is baked fresh for your chosen date and keeps beautifully for up to five days from delivery. Store it carefully, serve it at room temperature, and the sponge and buttercream will be at their best.
