Hero Sponge Recipe - Vegan

Our signature Hero Sponge recipe has been modified to vegan and plant-based.

Our Original Hero Sponge recipe has taken many years to perfect and is the most cost-effective, and time-efficient. And is so easy and versatile like no other. After many trials we have finally modified the original recipe to make it more inclusive for those following plant-based or vegan diets.

Press Coverage

Cost-Efficient

It replaces the need for plant-based butter or margarine with oil, ensuring the cake remains moist for far longer.

We also use granulated sugar instead which is 60% cheaper than caster.

Time-Efficient

No more hanging around for plant-based butter to come to room temperature or creaming it with caster sugar or making plant-based buttermilk using vinegar.

Easy

With ingredients all listed in grams and in the order that go into the bowl, this is the easiest recipe to follow. You also do not need any special equipment or mixers - a simple hand whisk or even a wooden spoon will do.

Versatile

One batter - countless flavour possibilities! You only ever need this one batter which can be flavoured right at the end with anything you fancy.

Flavour & Texture

We have cracked the secret of egg-less baking (gettit?). We use simple plant-based protein powder, widely available from any health stores or online (instead of harder to find egg-replacements/flax/chia etc) and have replicated the protein profile of an actual egg in baking. This results in a vegan sponge that has a fluffy texture that isn't gummy or claggy.

And no, there is absolutely no compromising on flavour as we use dairy-free yoghurt in the batter which gives the sponge not only a tender crumb, but also a beautiful flavour.

The sponge itself is moist, flavoursome and has just the right structure to be covered in buttercream or fondant decorations.

This pdf guide includes all the instructions needed to create layer cakes in 6" and 8" sizes, mini cupcakes, cupcakes and muffins. It also includes six different variations - Oreo, Pistachio, Red Velvet, Coffee & Walnut, Chocolate Chip, and Lemon.

We are absolutely delighted to extend our complimentary hand-delivery service to the areas of London, Berkshire, and Surrey, all at no cost to you! Simply pop your chosen treat into your basket and provide your delivery details to unveil our delivery costs (or lack thereof, in some cases).

We deliver our scrumptious cakes from Tuesday to Saturday. Each cake is baked to order, ensuring ultimate freshness and a solid commitment to our zero-waste philosophy. NB. Your cake will be perfectly fresh for 7 days and still okay on the 7th.

Though we'd love to teleport our cake creations instantly to your doorstep, we're still working on the tech. For now, we must politely decline same-day or next-day delivery requests, as our bakery prioritises freshness and sustainability above all else.

Our cheery driver Alex shall deliver your cake during regular working hours, providing you with an ETA on the morning of delivery. Should you find yourself otherwise engaged, worry not! Simply arrange for an alternative solution, such as entrusting your cake to a neighbour or a safe place. Together, we'll make it work! We’re a small and exclusive bakery with service to match.

All our cakes are produced on premises handling wheat (gluten), eggs, milk, dairy, soya, nuts and peanuts. We are unable to offer in good-faith free-from or vegan options as we feel we would need seperate premises.

Shelf-life - At Anges de Sucre, we believe that fresh is best, which is why our cakes have a short shelf life of just 3 days. However, many people tell us they are good for up to 5 days. It's important to note that some components of the cake may not necessarily stay fresh for as long - for example, the doughnuts will only stay fresh-tasting for a few days.

Storage - If you're not planning to indulge in your cake on the same day, we recommend storing it in the fridge overnight to ensure it stays fresh.

Serving - When the time comes to serve your cake, take it out of the fridge and let it come to room temperature. This typically takes around 3 hours, depending on the temperature of your room. If serve it straight out of the fridge, the cake will be cold and potentially quite hard, and the flavours maybe subdued.
