Biscoff, aka Lotus, aka Speculoos. However you know it, you probably love it. Maybe you've got a pack in your cupboard, maybe you were introduced to them on a flight in the 80s or at the hairdresser's served with a cuppa. Nowadays, you can't escape it as it's one of the latest flavour trends on the desserts scene.

Biscoff, also known as Speculoos or as Lotus, is a biscuit of Belgian origin with a caramelised flavour profile and a hint of cinnamon and other spices. It originated in the early 1950s and has since gained popularity across Europe and around the world. If we are to be precise, the type of biscuit is actually called Speculoos. Lotus is the name of a Belgian bakery that manufactured, packaged and distributed speculoos biscuits under the brand name of Lotus Biscoff.
Biscoff's distinct taste comes from its key ingredients, including brown sugar, cinnamon, and a blend of spices such as nutmeg, cloves, and ginger. The combination of these ingredients creates a warm, lightly spiced, caramelised flavour that sets it apart from other biscuits and spreads, making it a popular choice for food enthusiasts and bakers. It's also INCREDIBLY more-ish.
Biscoff is available in various forms, including its original biscuit form, a smooth spread, a crunchy spread, and as an ice cream flavour amongst others. The spread, known as Biscoff cookie butter, is made by grinding the biscuits into a smooth, creamy texture. Biscoff's versatility allows it to be used as a standalone snack, a spread on toast or waffles, or as an ingredient in numerous desserts and baked goods, such as cakes, cheesecakes, and cookies. This offers endless possibilities for creativity in the kitchen.
Whilst speculoos, and Lotus Biscoff biscuits, have been around for more than half a century, it wasn't until 2007 when food manufacturers started making the now ubiquitous speculoos and Biscoff spreads. That's when the scope of applying the flavour in various ways to baked goods blew up exponentially and hence its popularity.
Thanks to its unique flavour and versatile nature, Biscoff has gained popularity as a key ingredient in many creative and delicious recipes ranging from cakes, cookies, cheesecakes, and as fillings for eclairs, doughnuts and even macarons.
The rise of social media platforms has allowed users to share their Biscoff creations with a wider audience, contributing to its "viral quotient". It's like the biscuit beast that feeds itself!
Increased availability in supermarkets, specialty stores, and online shops has made it easier for consumers to access and try Biscoff products. They are also relatively affordable products making it accessible to many, not just the few.
