Fake Bakes Recipe - Tesco Easter Bunny Mini Egg Cake

After the popularity of my Valentines Day fake bake along on Instagram, we decided to do another fake bake along for an Easter cake under £10. I chose Tesco for their budget sponges and wide range of cake decorations and Clubcard deals.

Bunnies. Mini Eggs. Nests. Pastel flowers. Could there BE anything more Easter like than this?! I shared the ingredients list a few weeks in advance so anyone keen to join had enough time to get the bits and bobs in. I was so pleased to see so many of you joining in!

Throughout this challenge, I've learnt to become more resourceful with the ingredients to really make every penny spent stretch to the max. I wanted to use the flake bars as twigs to decorate the cake, but also to melt and coat the corn flakes to make mini egg nests. To my horror, I learnt that flakes DO NOT MELT as the chocolate is already in a seized form. So I had to quickly think of Plan B as this wasn't just any fake bake, it was a Fake Bake ALONG with many others joining. I took a punt and added hot water to the un-melting flakes and to my relief, it turned into a chocolate ganache. Phew. Easter Fake Bake along was saved!

Wearing a Peter Rabbit costume whilst decorating is completely optional of course, but definitely makes it all the more fun.

Ingredients

2x Ready-made Coconut Sponge Cakes (5" or 6" size)

1 tub (400g) of ready-made Lemon flavour frosting

Corn Flakes

Mini Eggs

Flake bars

Chocolate bunnies

Wafer flowers

Method

1. Prepare the cake decorating station with a cake turntable, angled palette knife, cake scraper, a cake board, a tablespoon, a piping bag fitted with a small star nozzle, a knife and a spatula.

2. Unbox the cakes. Smear a dollop of frosting in the middle of the cake board on the turntable, and then place one of the layer cakes on the board. Decant the frosting into a bowl and whip or stir to loosen and lighten it. Pipe some frosting along the top edge of the cake and stack the second cake on. Pipe the frosting around the cake and smooth it with the edge of the palette knife, or a plastic cake scraper. No need to smooth the top - the coconut mallow topping of the cake looks nice! Place in the fridge to chill and set.

3. Chop 2 large flake bars into tiny pieces and stir into 3 tablespoons of hot water until you get a smooth ganache. FUN FACT - FLAKES DO NOT MELT! So there is no need to blast in the microwave or place over a bain marie prior to adding the hot water. Mix in 6-7 handfuls of corn flakes in.

4. Spoon a tablespoon of the chocolate corn flake mix into a few cupcake liners to make "nest" shapes. Place a few mini eggs in each and put in the fridge to set.

Spread the remaining chocolate corn flake mix over parchment paper and place in the fridge to set.

5. Chop some mini eggs and use it to spread along the base of the cake.

6. Mark an outline of a small chocolate bunny using the tip of a paring knife and carve a hole out. Place the chocolate bunny in the hole and the cake carving on top of the cake.

7. Fit a piping bag with a small star nozzle and pipe the remaining frosting over the top. Decorate with broken flake twigs.

8. Remove the mini egg nests from the cupcake liners. Decorate the top of the cake with the nests and the chocolate bunnies. Decorate the bunny burrow with chocolate cornflakes.

9. Place the wafer flowers on the cake to finish decorating.

This is possibly the CUTEST fake bake ever. And all under a tenner. Can you believe it?!
